I was speaking to a young lady at The South Bend Farmers Market last week on the subject of pain management and health and wellness. As you might guess since that’s the reason I hang out there.
She happened to mention pineapple and chewing on the core can relieve pain. She said she had experienced this effect first hand. I have not looked at the fruit as of yet so a little research was called for.
I enjoy it a lot and on the grill is a favorite. With pork and chicken the flavor works quite well. Just adding a slice on top or as a marinade. On pizza and, of course, upside down cake. Green salads and fruit salad. One of my favorite milkshakes is a Hawaiian. I add some to Jello too. Hamburgers. Piña Cola da anyone? Yogurt and ice cream.
Pineapple is loaded with vitamin C.
Other vitamins present are Thiamine (B1), Riboflavin (vit. B2), Niacin (vit. B3), Pantothenic acid (B5), Vitamin B6, and Folate (vit. B9).
There are several minerals also and Manganese is one of the highest.
Manganese is a necessary nutrient found mainly in our bones and promotes healthy joints.
Manganese is a metal and is also used in the production of stainless steel and too much can be toxic as with any metal.
I have found plenty of information on pineapple and it’s benefits. It would seem that there is a pain reliving element present. For arthritis pain relief fresh pineapple is recommended. It seems the processing involved in juice and canned products deletes the positive effect.
Applied topically it can reduce inflammation. Both the root and fruit show this effect.
So what this young lady was saying seems to be true.

Foods high in Niacin can lower bad cholesterol and raise your good cholesterol.
Niacin is a form of vitamin B. B3 to be exact. You can also find it at your pharmacy in time release capsules.
Foods high in niacin abound. Other foods also contribute to good cholesterol health.
Fish is one and anchovies hold more than tuna and salmon. Mackerel, Lake trout, Herring, Sardines, Albacore Tuna, and Halibut. A friend of mine traveled to Alaska and brought home some fresh caught Halibut. Some of the beat fish I have ever eaten. Canned anchovies can be used for much more than just a pizza topping.
Leafy vegetables are a good source. What do thy say, the darker the green the better when it comes to leafy greens.
Asparagus and avocados. Broccoli, carrots, sweet potato. I enjoy sweet potato baked just like a regular potato. No need for all the sugar and marshmallows we add for the holidays. They are sweet enough for my taste. They also make great french fries. I have discovered a sweet potato macaroni and cheese recipe that is delicious. There is even a sweet potato cocktail that sounds interesting.
Tomatoes. I love tomatoes especially in summer and vine ripened. Sun dried tomatoes are available all year. Their concentrated flavor is wonderful in soups, salads, and sauces. You will find them in jars packed in oil or just dried in a bag. I keep a bag on hand and use them a lot. A little pricey but well worth the expense.
Carrots and dates are a good source. Have you ever tried a fresh date? They are wonderful.
Bran. Bran is the outer layer of grain including rice. Foods that contain the whole grain like brown rice and whole wheat bread hold the B3. Oatmeal is also included.
Beef and chicken. Liver is a high source as are heart and kidney. I truly enjoy calf liver. Liver and onions is a favorite of mine. I even make liver gravy and pour it over the mashed potatoes. I get a taste for chicken hearts, gizzards, and liver with noodles from time to time. My grandmother used to make it.
Have you discovered Scrapple? It is an old Pennsylvania Dutch recipe. Sort of a mush. Made with corn meal, refrigerated, and then sliced and fried like bacon. Give it a try. I think you will enjoy it.
Nuts and seeds. Walnuts and almonds. Don’t neglect your intake of nuts and seeds. It only takes a handful. Peanuts are a good source of niacin. Peanuts are really not a nut. They are in the legume family and all legumes are a source for B3. Alfalfa, clover, peas, beans, lentils, lupins, mesquite, carob, and soy are all in this family.
We can’t leave out eggs.
Do you have Paprika in your pantry? Used in sauces and curries, we also sprinkle some on deviled eggs. Give this a try next time you do deviled eggs. Use avocado instead of mayonnaise. Don’t forget the dash of lemon juice to stop the discoloration.
Be sure to consult your doctor about a niacin supplement. Controlling cholesterol levels should not be something you just try on your own. Have your levels checked. Get a second opinion.
In the news recently studies have shown B3 works on cholesterol better than some of the high dollar medications.
My doctor recommended niacin to me years ago. You can have a reaction to it and that is why the time release version is recommended. I experienced this once. Taking my pill in the morning I was also using concentrated sour cherry juice for pain. I took the teaspoon of juice to soon after the B3. It must have negated the time release and I became red as an apple and felt all prickly. Going to the doctor because I really didn’t know what was going on the nurse said “why are you red as an apple?” I said “I don’t know, that’s why I’m here.” The doctor said it was a classic niacin reaction and would go away in a short time. He left me in the room and I fell asleep. Waking me up when he returned he asked me if I was ready to go. I said yes, the reaction was gone. That was the most expensive nap I ever took.
I was totally unaware of this practice until a market chain I visit, Kroger’s, announced they were stopping this addition their beef.
Basically pink slime is garbage treated with ammonia to kill the bacteria and then added to ground beef. Uck! It’s an inexpensive filler. Inexpensive for who?
The grass fed beef at the farmer’s market looks better and better to me no matter the price. Feed lot beef is a crime agaist nature anyway. Pumped full of hormones and antibiotics pulse fed corn. Not how cows were meant to live.
This is crazy. In the United States ground beef can contain up to 15% without adding pink slime to the ingredient labeling. No wonder I never noticed it.
This is a sad state of affairs for me, because I usually pay attention, because I never heard of the stuff.
I enjoy hamburgers and at times even crave one. Out in the back yard on the grill is the best. Avocado and Jalapeno burgers are my favorite. Of course I like a Big Mac from time to time. This is good, Mac Donald’s announced they were stopping the practice in their beef.
The list of companies discontinuing this practice is long. Why it was ever acceptable is beyond me.
On March 25, 2012, BPI announced it would suspend operations at three of its four plants. The three plants produced a total of about 900,000 pounds of the product per day. Beef Products Inc. is the leading producer of ground beef. What’s going on with the 4th plant? Where are they still selling the stuff? Canada never allowed it in their beef.
BPI claims removing the slime will increase the obesity problem because the fat content will rise. So they intend to remove the slim and add fat. We just can’t win. I’m going to invest in the grinding attachment for my Kitchen Aid Mixer and grind my own.
On April 3, 2012, U.S. cattle futures were down to a three month low. Will we see a drop in beef prices?
Discontinuing this practice is not because of a change of the law. It’s from consumer outrage. Sales had dropped but some of that may just be because of how prices have risen. Just think the price has went up and 15% of the product, at the minimum, was garbage.
Any meat counter I find myself at I will ask if pink slime is present.
I do find it strange when something can become unacceptable in the US, even illegal, and our big corporations will still keep a market open over seas.
What a great time. Saturday I spent the day at the South Bend Farmers Market. The market has been in operation since 1924.
The vendors around me were great people. All of them have good stuff to offer. The whole market is that way. Fresh milk and butter without hormones. The same for eggs. Grass raised beef. All kinds of organic vegetables. All kinds of mushrooms, even morals, and fresh asparagus. Lamb and domestic rabbit. I wanted one of everything.
The gentlemen right next to me operated a loom. He made rugs from what he called uncycled material. Bath towels, blue jeans, milk jugs, and such. Really cool rugs.
Down a ways from me there was homemade hot sauce and salsa. The salsa wasn’t as good as mine but I tasted one of has hot sauces. It was a mustard based sauce and really good. Great flavor and good heat.
I have never tasted grass feed beef. The gentlemen had every cut you can think of and even hamburger. The fat content has to be lower so I wonder about the flavor. You may have to adjust the cooking times and heat especially on the roasts. I have cooked Buffalo many times and because of the lower fat content it’s a little different. You’ll have it dry and tough if you prepare it like beef.
Cows were never meant to eat corn. It messes up their stomachs and without all the antibiotics pumped into them they will get sick. It is said that back in the day the Texas Longhorn was lower in cholesterol and fat and a lot healthier than today’s beef.
The cost of most of theses items is some what higher than the norm. Of course the price of groceries is outrageous the days.
I lost track of how many people stopped and spoke with me. Most people were aware of the negative side effect of oral pain medications and became excited about our alternative.

Physicians spend many years in school and training to learn their craft. Doctors are suppose to be the ones to heal us and at the same time “Do No Harm.”
Statistics say 30% of the time when a person requests a drug, seen in an ad, a physician will write the prescription. Education is a wonderful thing but seeing a full page, glossy ad in a magazine is not education. Who ends up paying for the ad? We do.
It’s all about money and Nutritionist’s just don’t have access to the funding. OK, my rant on that subject is over.
I would like to see an ad with a big red tomato explaining how adding tomatoes to the diet can benefit those dealing with heart problems. How about romaine lettuce and how it has more vitamin C than an orange. Full of all the B vitamins and more omega 3 fatty acids than those fish oil tablets.
Nuts. Who is nuts? We should be nuts about Nuts! Nuts and seeds are concentrated sources of protein, fats, B vitamins, vitamin E, iron, magnesium and other minerals. H ow often do we prepare squash and just toss the seeds? Gentlemen are you aware pumpkin seeds have a positive effect on you prostate? Not just for Halloween, pumpkin is tasty and sweet cooked just like squash. Roast the seeds and munch them. Instead of Viagra add pumpkin seeds to your diet. No blindness or an unhealthy rise in blood pressure there.
I am one who is always willing to try new foods and recipes.

It is likely an ancient wine connoisseur neglected a container of fermented grape juice for a time. Setting undisturbed for some time, when returning to consume the juice found vinegar instead. Unable to drink the wine the enthusiasm over the happening surly was not received well at the time but the benefits of vinegar has served us well ever since.
The Balsamic version first appeases in Italy during the middle ages. The process is much like producing wine and bourbon or scotch whiskey. Aged in wooden casts from 8 to 25 years or more. The most valuable stuff being the oldest, a bottle of this can go for $400. I have never splurged on a bottle of this grade but have tasted it.
You will find simulated versions on the self that are cheep and not so flavorful. I never buy them. I always get one imported from Italy. A little pricey but well worth it and it will last me for some time. Labeled Aceto Balsamicodi Modena it is the modern imitation of the real stuff, Aceto Balsamico Tradizionale. The price is affordable and I truly enjoy the flavor.
I have two favorites. One is a vinaigrette made with fresh lemon juice, salt, balsamic, and olive oil. This is the basics and you may add any herb or spice you like. The basic is one of my favorite choices for a salad. The second is fruit. The way it brings out the flavor of strawberries is amazing. Balsamic vinegar and a dash of black pepper is fantastic. On ice cream, short cake, or just by themselves it’s great. I have been known to add a dash to preserves when adding it to yogurt.
A sprinkle added to shrimp or scallops works well also. Chefs have been coming up recipes from eggs to steaks and finding it’s culinary benefits.
It does contain some sulfites. Sulfites are found in many foods and even drugs, typically used as a preservative.
Vinegar, in general, has an extensive list of uses and benefits. I learned how well it cleaned glass at a young age. My mom would send me outside with a bucket of water and vinegar mix and some wadded up newspaper every spring to wash the windows. She would pour it all over me in summer to ease the sting of sun burn too. I was never one to turn down a pickle ether. Update: now I find it works well cleaning my computer. It may even unclog your slow kitchen drain and clean you coffee pot.
If you and the others around you don’t mind the smell the bugs don’t like it ether when your out in the deep woods hunting mushrooms.
I always marinade my pork in a mix of water, seasoned salt, and white vinegar before putting it on the grill. It’s so good we hardly need barbecue sauce.
